Vermont sugarmakers boil in early December

The Stewart family in Cuttingsville, Vt. started tapping trees on Nov. 14 and have had several good runs of sap so far in December. Tanner Stewart and Wyatt Davenport report that the family has had a lot of success tapping trees early and leaving the vacuum on for 5 months straight, shutting down in late April. Last year they made 40,000 gallons off of 45,000 taps of their own and another 25,000 taps worth of sap trucked in. They say the trees have not been affected by the long production, inspecting a recent storm-downed tree and seeing that the growth rings were actually bigger in the years where the tree was tapped early.
