On the Scene: Making birch syrup at the Forest Farmers with Mike Farrell

Mike Farrell, general manager of the new Forest Farmers complex in Marshfield, Vt. where they have 18,000 birch taps, explains the process of making the late season "extra crop" with modern steam technology. The operation markets the birch syrup in boutique retail and sells birch sap to several beverage companies. Farrell made a name for himself in birch innovation during his time as the director of Cornell University's maple research center.
