We are visiting with David Campbell of Salem, N.Y. as he wraps up his second boil of the season already on January 15, making Grade A Amber syrup off the 6,000 gallons he got off his 5,000 taps drilled so far. Campbell is one of a handful of sugarmakers in the U.S. who has taken advantage of the perfect sugaring weather...in January. He expects to have no problem keeping his tap holes fresh until April, as long as the high vacuum pump is on.
