How does the fall syrup taste?

Mark Stewart from Stewart Maple in Cuttingsville, Vt. boils on Dec. 8, making pretty decent syrup from 1.2 percent sap. The farm has made a tradition of tapping trees in November and boiling all the way until late April, with a lot of success. They started tapping on Nov. 14 and already have 16,000 drilled. They boil on a brand new CDL R7 steam evaporator.
